  • 1 teaspoon finely grated lemon zest

  • 1 tablespoon finely chopped fresh dill or chives (optional)

Instructions

  1. Wash and trim the ends of 3 medium zucchinis. Grate them coarsely using a box grater or food processor to yield about 3 cups.
  2. Sprinkle 1 teaspoon salt over the grated zucchini and toss to combine. Let it sit for 10 minutes to draw out excess moisture.
  3. Place the zucchini in a clean kitchen towel or cheesecloth and wring out as much water as possible until mostly dry to the touch.
  4. In a separate bowl, whisk 2 large eggs. Add 1/2 cup grated Parmesan, 1/2 cup all-purpose flour, 2 minced garlic cloves, 2 tablespoons chopped parsley or dill, and 1/2 teaspoon freshly ground black pepper. Stir to combine.
  5. Add the dried zucchini to the egg mixture and fold everything together until evenly mixed. If the batter is too wet, add a little more flour.
  6. Heat 3-4 tablespoons of olive oil over medium heat in a non-stick or cast iron skillet until hot but not smoking (about 350°F).
  7. Scoop about 2 tablespoons of batter per fritter and gently flatten into rounds. Place them carefully into the pan, leaving space to flip. Cook for 3-4 minutes per side until golden brown and crispy. Work in batches if needed.
