These crispy Parmesan ranch chicken wings are dangerously good, with a savory, slightly tangy crust that clings to every nook and cranny. Made in the air fryer, they deliver deep-fried texture without the grease, using simple pantry staples and minimal effort.

Ingredients

Scale
  • 2 pounds (about 900g) chicken wings, separated into flats and drumettes
  • 1 packet (about 1 ounce or 28g) ranch seasoning mix
  • 1/2 cup (50g) grated Parmesan cheese (shelf-stable, from a shaker)
  • 1 teaspoon baking powder (aluminum-free)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon black pepper, freshly ground
  • 1 tablespoon avocado oil or olive oil
  • Optional: fresh parsley, chopped, and extra ranch dressing for dipping

Instructions

  1. Prep the wings: Pat the chicken wings completely dry with paper towels. If time allows, let them sit uncovered in the fridge for 30 minutes to dry out further.
  2. Mix the dry ingredients: In a small bowl, combine ranch seasoning mix, grated Parmesan, baking powder, garlic powder, onion powder, and black pepper. Stir until evenly distributed, breaking up any clumps with your fingers.
  3. Season the wings: Place dried wings in a large mixing bowl. Drizzle with oil and toss to coat evenly. Sprinkle the seasoning mixture over the wings and toss again until every piece is well coated, using your hands for even coverage.
  4. Preheat the air fryer: Set air fryer to 380°F (193°C) and preheat for 3-5 minutes.
  5. Arrange the wings: Place wings in a single layer in the air fryer basket, leaving space between each piece. Work in batches if needed.
  6. Cook the first side: Air fry at 380°F (193°C) for 12 minutes.
  7. Flip and finish: Flip each wing with tongs. Increase temperature to 400°F (204°C) and cook for another 8-10 minutes, until golden brown and the Parmesan crust is bubbling and crispy. Internal temperature should reach 165°F (74°C).
  8. Rest and serve: Let wings rest in the basket for 2-3 minutes before transferring to a serving platter. Sprinkle with fresh parsley if desired and serve immediately.

Notes

Pat wings thoroughly dry for maximum crispiness. Do not skip the baking powder—it helps the skin brown and crisp. Work in batches to avoid overcrowding. Let wings rest after cooking to set the crust. For oven method, bake at 425°F (220°C) on a wire rack over a baking sheet for 40-45 minutes, flipping halfway.
