Crispy Grilled BBQ Bacon-Wrapped Corn on the Cob

A smoky, crispy twist on classic corn on the cob, wrapped in thick-cut bacon and glazed with tangy BBQ sauce, perfect for summer BBQs.

  • 4 ears fresh corn on the cob, husked
  • 8 slices thick-cut bacon
  • 1/2 cup BBQ sauce (smoky variety recommended)
  • 1 tablespoon olive oil
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Optional garnish: chopped fresh parsley or cilantro

Instructions

  1. Husk the corn and remove all silk strands. Rinse under cold water and pat dry with a towel (about 5 minutes).
  2. Brush each ear of corn with olive oil, then sprinkle with salt and pepper (about 3 minutes).
  3. Wrap two slices of bacon tightly around each ear of corn, overlapping slightly to cover as much surface as possible (about 5 minutes).
  4. Preheat grill to medium heat (around 350°F / 175°C).
  5. Place bacon-wrapped corn on the grill grates, close the lid, and cook for about 10 minutes.
  6. Turn the corn every 3-4 minutes using tongs, brushing with BBQ sauce each time to caramelize the glaze. Continue grilling for a total of about 20 minutes.
  7. Check that corn kernels are tender and bacon is crisp and crackly. If bacon crisps too fast, move corn to indirect heat and continue cooking.
  8. Remove corn from grill and let rest for 2 minutes. Garnish with chopped parsley or cilantro if desired.

Notes

Use medium heat (around 350°F) to avoid burning bacon before corn cooks. Turn corn gently every few minutes to prevent flare-ups and ensure even cooking. Thick-cut bacon crisps best. If flare-ups occur, move corn to indirect heat or use foil shields. Rest corn for 2 minutes before serving to seal flavors. For indoor cooking, roast at 400°F for 25 minutes, turning halfway.
