A quick and easy breakfast recipe featuring toasted everything bagels topped with creamy mashed avocado and perfectly poached eggs for a satisfying and flavorful start to your day.

  • 2 medium-sized everything bagels, sliced in half
  • 1 ripe avocado, peeled and pitted
  • 2 large eggs, fresh and at room temperature
  • 1 teaspoon freshly squeezed lemon juice
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Red pepper flakes, optional, a pinch
  • 1 tablespoon white vinegar (for poaching eggs)
  • 1 tablespoon olive oil or butter (for toasting bagels)

Instructions

  1. Slice 2 everything bagels in half horizontally.
  2. Heat a non-stick skillet over medium heat and add 1 tablespoon of olive oil or butter.
  3. Toast the bagel halves cut-side down for about 2-3 minutes or until golden brown and crispy. Watch closely to avoid burning. Set aside on a plate.
  4. In a small bowl, scoop the ripe avocado and add 1 teaspoon of fresh lemon juice.
  5. Mash gently with a fork until mostly smooth but still a bit chunky. Season with a pinch of salt and black pepper. Taste and adjust seasoning if needed.
  6. Fill a deep skillet or saucepan with about 3 inches of water and bring to a gentle simmer (not a rolling boil).
  7. Add 1 tablespoon of white vinegar to the water to help the egg whites coagulate.
  8. Crack one egg into a small bowl or ramekin.
  9. Swirl the water gently with a spoon to create a vortex, then carefully slide the egg into the center.
  10. Poach for 3-4 minutes for a runny yolk or longer for a firmer yolk.
  11. Remove the egg with a slotted spoon and drain on a paper towel. Repeat with the second egg.
  12. Spread the mashed avocado evenly over each toasted bagel half.
  13. Carefully place a poached egg on top of each.
  14. Sprinkle with a little extra salt, black pepper, and optional red pepper flakes for heat.
  15. Optionally, drizzle a little olive oil or a squeeze of lemon juice on top to brighten the flavors.
  16. Garnish with fresh herbs like chopped chives or parsley if desired.

Keep the water at a gentle simmer for poaching; too hot and the eggs can break apart. Using fresh eggs helps them hold their shape better. Toast bagels on medium heat to avoid burning or sogginess. Add lemon juice to avocado to prevent browning if prepping ahead. For gluten-free option, use gluten-free everything bagels or bread. Vinegar helps egg whites hold together during poaching.
