These crispy buffalo chicken egg rolls combine spicy buffalo chicken filling wrapped in a golden, crunchy shell, served with a creamy blue cheese dip. Perfect for game day or a quick, flavorful snack.

  • 1/2 cup buffalo wing sauce (Frank’s RedHot preferred)
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup finely chopped green onions
  • 1/4 cup shredded mozzarella cheese (optional)
  • Salt and freshly ground black pepper, to taste
  • 12 egg roll wrappers
  • 1 large egg, beaten (for sealing the egg rolls)
  • Vegetable oil or canola oil, for frying (about 2 inches deep)
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1/2 cup crumbled blue cheese
  • 1 tablespoon lemon juice
  • 1 teaspoon Worcestershire sauce
  • Salt and freshly ground black pepper, to taste

Instructions

  1. In a large bowl, toss the shredded chicken with buffalo wing sauce until evenly coated. Add shredded cheddar and mozzarella cheeses along with chopped green onions. Mix gently to combine. Season lightly with salt and pepper.
  2. Place one egg roll wrapper on a clean, dry surface with one corner pointing towards you. Keep the rest covered with a damp cloth to prevent drying out.
  3. Spoon about 2 tablespoons of the buffalo chicken filling near the corner closest to you. Fold that corner over the filling, then fold in the two side corners snugly. Roll tightly towards the opposite corner. Brush the edge with beaten egg to seal. Repeat with remaining wrappers and filling.
  4. Pour oil into a deep pan to 2 inches depth. Heat to 350°F (175°C). Use a thermometer if available.
  5. Carefully add 3-4 egg rolls at a time to the hot oil. Fry until golden brown and crispy, turning occasionally for even color, about 5-7 minutes. Remove with a slotted spoon and drain on paper towels.
  6. While frying, mix sour cream, mayonnaise, crumbled blue cheese, lemon juice, Worcestershire sauce, salt, and pepper in a small bowl. Stir gently but thoroughly. Chill until ready to serve.
  7. Serve the hot, crispy buffalo chicken egg rolls alongside the creamy blue cheese dip. Optionally garnish with extra chopped green onions or blue cheese crumbles.

Notes

Keep unused egg roll wrappers covered with a damp cloth to prevent drying. Maintain oil temperature at 350°F for best crispiness. Do not overcrowd the pan when frying. Egg rolls can be assembled and frozen uncooked; fry from frozen adding extra cooking time. For a lighter version, use an air fryer at 375°F for 12 minutes, flipping halfway. To reheat leftovers, bake at 375°F for 10 minutes to retain crispiness.
