  • 2 cups (about 10 oz) cooked shredded chicken
  • 1/2 cup (4 fl oz) BBQ sauce (smoky and slightly sweet)
  • 1/2 medium red onion, thinly sliced
  • 1/4 cup (about 0.35 oz) fresh cilantro leaves, roughly chopped
  • 3/4 cup (about 3 oz) shredded cheese blend (mozzarella and sharp cheddar)
  • Pinch of smoked paprika (optional)
  • Olive oil, for brushing flatbread edges
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 425°F (220°C). Place a baking sheet inside to heat up while you prepare the ingredients (about 10 minutes).
  2. In a mixing bowl, combine shredded cooked chicken with BBQ sauce and smoked paprika if using. Toss well to coat evenly.
  3. Thinly slice the red onion and roughly chop the cilantro leaves; keep cilantro separate for topping after baking.
  4. Carefully remove the hot baking sheet from the oven. Place the flatbread on it and brush the edges lightly with olive oil.
  5. Spread 2-3 tablespoons of BBQ sauce evenly over the flatbread, leaving about a 1/2 inch border.
  6. Sprinkle shredded cheese evenly over the BBQ sauce.
  7. Distribute the BBQ chicken mixture evenly over the cheese, then scatter the sliced red onions on top.
  8. Bake the flatbread pizza on the hot baking sheet for 10-12 minutes until the cheese is melted, bubbly, and the edges are crisp and golden.
  9. Remove from oven and immediately sprinkle chopped cilantro over the top.
  10. Let the pizza cool for 2-3 minutes before slicing into wedges and serving.

Notes

Preheat the baking sheet before placing the flatbread on it for extra crispiness. Brush edges with olive oil to help brown the crust. If flatbread feels soft after baking, broil for 1-2 minutes watching closely to avoid burning. Avoid overloading toppings to keep crust crispy. Add fresh cilantro after baking to maintain brightness.
