Ingredients

Scale
  • Seedless watermelon, cut into fry-sized sticks about 1/2 inch thick
  • 1/4 cup all-purpose flour (30 g)
  • 2 tablespoons cornstarch (15 g)
  • 1/4 teaspoon salt
  • Dash of ground black pepper
  • Cooking spray or neutral oil (e.g., avocado oil spray)
  • For the Honey Lime Dip:
  • 2 tablespoons honey (30 ml)
  • 1 tablespoon fresh lime juice (15 ml)
  • 1/4 cup plain Greek yogurt (60 g) (can substitute dairy-free coconut yogurt for vegan option)
  • Pinch of salt
  • Optional: 1 teaspoon lime zest

Instructions

  1. Cut seedless watermelon into thick sticks about 1/2 inch wide and 3-4 inches long, keeping pieces uniform for even cooking.
  2. In a medium bowl, whisk together 1/4 cup all-purpose flour, 2 tablespoons cornstarch, 1/4 teaspoon salt, and a dash of black pepper.
  3. Gently toss the watermelon sticks in the flour mixture to lightly coat each piece with a thin, even layer. Set aside any excess coating.
  4. Preheat the air fryer to 400°F (200°C) for about 3 minutes.
  5. Place coated watermelon fries in a single layer inside the air fryer basket without overcrowding. Lightly spray or brush fries with cooking spray or oil.
  6. Air fry for 8-10 minutes, flipping halfway through, until edges are golden and slightly crispy but not browned.
  7. While fries cook, whisk together honey, fresh lime juice, Greek yogurt, a pinch of salt, and optional lime zest in a small bowl to make the honey lime dip.
  8. Remove fries from air fryer and let cool for a minute or two. Serve warm with honey lime dip on the side.

Notes

Pat watermelon sticks dry before coating to reduce moisture and avoid soggy fries. Do not overcrowd the air fryer basket to ensure even crisping. Flip fries halfway through cooking. For extra adhesion, dip fries briefly in beaten egg or plant-based milk before coating. Lime zest brightens the dip flavor; add chili powder to dip for a spicy kick. Leftovers can be stored in the fridge up to 2 days; reheat in air fryer at 350°F for 3-4 minutes to restore crispiness.
