A quick and healthy dinner recipe featuring crispy air fryer salmon with tender broccoli and sticky teriyaki sauce served over fluffy rice.

Ingredients

Scale
  • 2 skin-on salmon fillets, about 6 ounces (170g) each
  • 2 cups (150g) fresh broccoli florets
  • 1/4 cup (60ml) teriyaki sauce
  • 1 tablespoon (15ml) olive oil
  • 1/2 teaspoon (1.25g) garlic powder
  • Salt and pepper to taste
  • 2 cups (400g) cooked jasmine or brown rice
  • Optional garnishes: sesame seeds, sliced green onions, lime wedges

Instructions

  1. Cook about 1 cup (200g) dry jasmine or brown rice according to package instructions (15-20 minutes). Fluff and keep warm.
  2. In a medium bowl, toss broccoli florets with olive oil, garlic powder, salt, and pepper. Set aside.
  3. Pat salmon fillets dry with paper towels. Brush each fillet with 2 tablespoons (30ml) teriyaki sauce, including the skin side. Season lightly with salt and pepper.
  4. Preheat air fryer to 375°F (190°C). Place broccoli in a single layer in the basket and air fry for 8 minutes, shaking halfway through.
  5. Remove broccoli and place salmon fillets skin-side down in the air fryer basket. Air fry at 400°F (205°C) for 8-10 minutes until skin is crispy and salmon is opaque and flaky.
  6. Warm 2 tablespoons (30ml) teriyaki sauce in a small saucepan or microwave for drizzling.
  7. Divide cooked rice into two bowls. Top with air-fried broccoli and salmon fillets. Drizzle warmed teriyaki sauce over the bowls and garnish with sesame seeds and sliced green onions if desired.

Notes

Pat salmon dry before air frying to ensure crispy skin. Do not overcrowd the air fryer basket for best results. Air fry broccoli first as it cooks faster than salmon. Warm teriyaki sauce before drizzling. For gluten-free, use tamari-based teriyaki sauce. Salmon can be marinated 15-30 minutes ahead for deeper flavor. Reheat leftovers in air fryer to restore crispiness.
