  • 3 medium russet potatoes (peeled or unpeeled)
  • 12 sprigs fresh rosemary, finely chopped
  • 2 tablespoons olive oil (extra virgin recommended)
  • Sea salt, to taste
  • ¼ teaspoon freshly ground black pepper
  • ½ teaspoon garlic powder (optional)
  • Cold water (for soaking potatoes)

Instructions

  1. Wash and peel (if desired) the russet potatoes. Cut into ¼ to ½-inch thick sticks, about 3-4 inches long.
  2. Place cut potatoes in a large bowl filled with cold water. Soak for at least 30 minutes or up to 2 hours to remove excess starch.
  3. Drain and pat the fries completely dry using paper towels or a clean kitchen towel.
  4. In a dry bowl, toss fries with olive oil, chopped fresh rosemary, sea salt, black pepper, and garlic powder if using. Coat evenly without excess oil.
  5. Preheat the air fryer to 380°F (193°C) for about 3 minutes.
  6. Arrange fries in a single layer in the air fryer basket without overcrowding. Cook in batches if necessary.
  7. Air fry for 15-20 minutes, shaking or flipping fries every 5 minutes for even cooking. Fries should be golden brown and crispy.
  8. If fries are not crisp enough, increase temperature to 400°F (204°C) for the last 3-5 minutes, watching closely to avoid burning.
  9. Serve immediately, optionally sprinkling more fresh rosemary or salt.

Notes

Soaking the potatoes removes excess starch and prevents soggy fries. Dry fries thoroughly before cooking to ensure crispiness. Cook fries in a single layer and shake or flip every 5 minutes for even browning. Use fresh rosemary for best flavor and avoid burning by tossing herbs with fries at the start and redistributing halfway through cooking.
