  • 1/2 cup (60g) cornstarch
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • Freshly ground black pepper, to taste
  • 1 large egg, beaten
  • Cooking spray or a light brush of oil
  • 1/3 cup (80ml) mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 to 2 teaspoons sriracha
  • 1 teaspoon lime juice
  • Optional: pinch of garlic powder or smoked paprika for sauce
  • Optional garnish: chopped green onions or cilantro

Instructions

  1. If using frozen shrimp, thaw completely and pat dry with paper towels.
  2. In a medium bowl, whisk together flour, cornstarch, paprika, garlic powder, salt, and pepper.
  3. In a separate bowl, lightly beat the egg until smooth.
  4. Dip each shrimp into the egg, letting excess drip off, then dredge thoroughly in the dry mix. Set aside.
  5. Preheat the air fryer to 400°F (200°C) for about 3 minutes.
  6. Place shrimp in a single layer in the air fryer basket, working in batches if needed to avoid crowding.
  7. Lightly spray or brush shrimp with cooking oil.
  8. Air fry for 8-10 minutes, flipping halfway through, until golden, crispy, and opaque inside.
  9. While shrimp cooks, whisk together mayonnaise, sweet chili sauce, sriracha, and lime juice in a small bowl. Adjust sriracha to taste.
  10. Toss cooked shrimp gently with spicy mayo or serve sauce on the side. Garnish with chopped green onions or cilantro if desired.

Pat shrimp dry before coating for best crispiness. Use cornstarch for a crunchy crust. Cook shrimp in a single layer to avoid steaming. Lightly oil shrimp before air frying.
