  • 2 cups fresh baby spinach (about 60 g), roughly chopped
  • 1 cup heavy cream (240 ml)
  • ½ cup freshly grated Parmesan cheese (about 50 g)
  • 1 teaspoon Italian seasoning (oregano, basil, thyme)
  • Salt, to taste
  • Black pepper, to taste
  • Pinch of crushed red pepper flakes (optional)

Instructions

  1. Place chicken breasts between two sheets of plastic wrap and pound gently with a meat mallet or rolling pin until about ½ inch (1.3 cm) thick. Season both sides with salt, pepper, and 1 teaspoon Italian seasoning.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken breasts and cook 4-5 minutes per side until golden brown and cooked through (internal temperature ~165°F / 74°C). Remove chicken and set aside, tented with foil.
  3. Lower heat to medium. Add minced garlic and chopped sun-dried tomatoes to the skillet. Sauté for 1-2 minutes until fragrant, stirring constantly.
  4. Stir in fresh baby spinach and cook until wilted, about 1-2 minutes.
  5. Pour in heavy cream and bring to a gentle simmer. Stir in grated Parmesan cheese and 1 teaspoon Italian seasoning. Let sauce bubble gently until it thickens slightly, about 3-5 minutes. Adjust salt, pepper, and add crushed red pepper flakes if desired.
  6. Return chicken breasts to the skillet, nestling them into the sauce. Spoon sauce over the chicken and warm together for 2 minutes.
  7. Serve chicken with extra sauce and sun-dried tomatoes spooned on top. Pair with mashed potatoes, crusty bread, or pasta.

Notes

If sauce thickens too much before adding chicken, stir in a splash of chicken broth or water to loosen. Use room temperature chicken for even cooking. Avoid overcrowding the pan to ensure proper searing. Add Parmesan cheese near the end to prevent clumping. Reserve a teaspoon of sun-dried tomato oil for extra flavor if using oil-packed tomatoes.
