A quick and easy healthy breakfast recipe combining creamy banana, fresh strawberries, oats, and Greek yogurt for a naturally sweet and satisfying start to busy mornings.

  • ½ cup milk of choice (120 ml) – dairy, almond, oat, or any plant-based milk
  • ¼ cup Greek yogurt (60 g), plain or vanilla
  • 1 small-medium ripe banana, mashed
  • ½ cup fresh strawberries (75 g), sliced
  • 1 tablespoon chia seeds
  • 12 teaspoons honey or maple syrup (optional)
  • ½ teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Peel and mash 1 ripe banana in a bowl until smooth (about 1-2 minutes).
  2. In a mason jar or airtight container, combine mashed banana, ½ cup milk, ¼ cup Greek yogurt, 1-2 teaspoons honey or maple syrup (if using), and ½ teaspoon vanilla extract. Stir well to blend evenly.
  3. Add ½ cup rolled oats, 1 tablespoon chia seeds, and a pinch of salt. Mix thoroughly until oats and seeds are coated with the wet mixture (about 1 minute).
  4. Gently fold in ½ cup sliced fresh strawberries, being careful not to mash them.
  5. Seal the container tightly and refrigerate overnight or for at least 6 hours to allow oats and chia seeds to soften.
  6. In the morning, stir the oats well. If too thick, add a splash of milk to loosen. Top with extra strawberries, banana slices, or nuts if desired. Serve cold or at room temperature.

Notes

Use ripe, spotty bananas for natural sweetness and creaminess. For vegan option, substitute Greek yogurt with coconut or almond-based yogurt and honey with maple syrup or agave nectar. Rolled oats are preferred for texture; quick oats require shorter soak time (4-6 hours). Do not overload with fruit inside the mix to avoid watery texture. Chia seeds help thicken and add fiber. Can be served cold or warmed briefly in microwave.
