  • 2 large boneless, skinless chicken breasts (about 1 pound / 450g)
  • 3/4 cup (6 fl oz / 180 ml) buffalo sauce (medium heat, e.g., Frank’s RedHot)
  • 8 ounces (1 cup / 225g) cream cheese, softened
  • 1 cup (about 4 ounces / 100g) shredded sharp cheddar cheese
  • 1 cup (about 4 ounces / 100g) shredded mozzarella cheese
  • 1/2 cup (4 fl oz / 120 ml) ranch dressing
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and black pepper to taste
  • Optional garnish: chopped green onions or fresh parsley

Instructions

  1. Place raw chicken breasts in the slow cooker and pour 1/4 cup (2 fl oz / 60 ml) of buffalo sauce over them. Cover and cook on low for 4 hours or until chicken is tender and shreds easily. (Skip if using pre-cooked or rotisserie chicken.)
  2. Remove chicken breasts from slow cooker and shred using two forks or shredder claws. Set aside.
  3. In a medium bowl, combine softened cream cheese, shredded cheddar, shredded mozzarella, ranch dressing, garlic powder, onion powder, salt, and black pepper. Stir until smooth and well blended.
  4. Return shredded chicken to the slow cooker and pour in remaining 1/2 cup (4 fl oz / 120 ml) buffalo sauce. Stir to coat chicken evenly.
  5. Pour the cream cheese and cheese mixture over the buffalo chicken in the slow cooker. Gently stir until fully combined.
  6. Cover and cook on low for an additional 1 to 2 hours, stirring every 30 minutes to prevent sticking. The dip should be hot, bubbly, and creamy when ready.
  7. Taste and adjust seasoning if needed. Sprinkle chopped green onions or parsley on top for garnish. Serve warm with celery sticks, tortilla chips, or crusty bread.
