A quick and wholesome breakfast combining the cozy flavors of peach cobbler with the convenience of overnight oats. Creamy, cinnamon-spiced, and ready to grab-and-go.

  • 1 cup old-fashioned rolled oats (90g)
  • 1 cup fresh or frozen peaches, diced
  • ½ cup small-curd cottage cheese (120g)
  • 1 cup milk (240ml), any kind (unsweetened almond milk recommended)
  • ¼ cup Greek yogurt (60g)
  • 2 tbsp maple syrup (30ml)
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • 1 tsp lemon juice
  • 1 tbsp chia seeds (optional)
  • Pinch of salt

Instructions

  1. Dice 1 cup of fresh or thawed frozen peaches into bite-sized pieces and toss with 1 tsp lemon juice to keep fresh.
  2. In a mixing bowl, combine ½ cup small-curd cottage cheese, ¼ cup Greek yogurt, 1 cup milk, and 2 tbsp maple syrup. Whisk gently until smooth and creamy. Optionally blend for 15-20 seconds for ultra-smooth texture.
  3. Stir in 1 cup rolled oats, 1 tsp ground cinnamon, ¼ tsp ground nutmeg, and a pinch of salt until oats are evenly coated.
  4. Fold in the diced peaches and 1 tbsp chia seeds (if using).
  5. Spoon mixture into mason jars or airtight containers, seal tightly, and refrigerate overnight or at least 6 hours.
  6. In the morning, stir gently. Microwave for 30-45 seconds if a warm breakfast is desired. Top with extra fresh peaches, cinnamon, or honey if desired.

Notes

Use small-curd cottage cheese for best texture. Chia seeds are optional but help thicken the oats. If mixture is too thick in the morning, add a splash of milk. Peaches can be fresh, frozen, or canned (drain canned peaches well and add extra lemon juice). For dairy-free, substitute coconut yogurt and plant-based milk, and replace cottage cheese with blended silken tofu or creamy coconut yogurt.
