  • 1/3 cup sun-dried tomatoes packed in oil (50 grams)
  • 3 cups loosely packed fresh spinach (90 grams)
  • 1 cup heavy cream (240 ml)
  • 1/2 cup grated Parmesan cheese (50 grams)
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 cup chicken broth (240 ml)
  • 1 teaspoon dried Italian herbs (oregano, basil, thyme mix)
  • Salt and pepper to taste

Instructions

  1. Pat the chicken breasts dry and season generously with salt, pepper, and dried Italian herbs on both sides.
  2. Heat 2 tablespoons olive oil in a large skillet over medium-high heat until shimmering.
  3. Sear the chicken breasts for 5-6 minutes per side until golden brown. Remove and set aside.
  4. Lower heat to medium and sauté minced garlic and sun-dried tomatoes for 1-2 minutes until fragrant.
  5. Pour in 1 cup chicken broth to deglaze the pan, scraping up browned bits. Simmer for 2-3 minutes to reduce slightly.
  6. Lower heat to medium-low and stir in 1 cup heavy cream and 1/2 cup grated Parmesan cheese. Cook gently until sauce thickens, about 3-5 minutes.
  7. Add 3 cups fresh spinach and stir until wilted, about 2 minutes.
  8. Return chicken breasts to the pan, spoon sauce over them, and simmer for 5-7 minutes until chicken is cooked through (internal temperature 165°F).
  9. Taste and adjust seasoning with salt and pepper. If sauce is too thick, add a splash of broth or cream to loosen.
  10. Serve immediately with sauce spooned over the chicken.

Notes

Use boneless skinless chicken thighs for juicier meat and adjust cooking time accordingly. For dairy-free, substitute heavy cream with coconut cream and Parmesan with nutritional yeast. Avoid boiling cream to prevent splitting. Soak dry sun-dried tomatoes in warm water for 10 minutes before use. Serve with crusty bread, mashed potatoes, or low-carb sides like cauliflower rice.
