  • 1 pound (450 g) beef sirloin or ribeye, thinly sliced
  • 8 ounces (225 g) egg noodles
  • 8 ounces (225 g) cremini or white mushrooms, sliced
  • 1 medium yellow onion, diced
  • 3 garlic cloves, minced
  • 2 ½ cups (600 ml) beef broth, preferably low sodium
  • ¾ cup (180 ml) sour cream
  • 1 tablespoon Dijon mustard
  • 2 tablespoons all-purpose flour
  • 2 tablespoons butter
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley, chopped (optional)

Instructions

  1. Slice 1 pound (450 g) of beef sirloin into thin strips, about ¼ inch (0.6 cm) thick. Dice 1 medium yellow onion and slice 8 ounces (225 g) of mushrooms. Mince 3 garlic cloves. Set aside.
  2. Heat 1 tablespoon butter over medium-high heat in a large skillet. Add half the beef strips in a single layer and sear until browned on all sides, about 2-3 minutes per batch. Remove beef to a plate and set aside.
  3. Lower heat to medium. Add remaining 1 tablespoon butter to the pan, then toss in diced onions and mushrooms. Cook, stirring occasionally, until softened and golden, about 5-7 minutes. Add minced garlic in the last minute to avoid burning.
  4. Sprinkle 2 tablespoons all-purpose flour over the veggies. Stir constantly for 1-2 minutes to cook out the raw taste.
  5. Slowly pour in 2 ½ cups (600 ml) beef broth while stirring. Scrape up any browned bits on the bottom. Bring to a gentle simmer.
  6. Add 8 ounces (225 g) of egg noodles to the simmering broth mixture. Cover and cook, stirring occasionally, until noodles are tender, about 8-10 minutes. Keep an eye so they don’t stick or overcook.
  7. Stir the browned beef strips back into the pot. Cook for 2-3 minutes until heated through.
  8. Remove from heat. Stir in ¾ cup (180 ml) sour cream and 1 tablespoon Dijon mustard. Season with salt and freshly ground black pepper to taste. Mix gently until the sauce is creamy and well combined.
  9. Sprinkle chopped fresh parsley over the stroganoff before serving.

Notes

If sauce is too thick, add a splash of broth or water. If too thin, simmer uncovered to reduce. Slice beef thinly against the grain for tenderness. Brown beef in batches to avoid steaming. Add sour cream off heat to prevent curdling. Use gluten-free flour and pasta for gluten-free version. Greek yogurt can replace sour cream for a lighter sauce.
