  • 3 cloves garlic, minced
  • 1/2 cup chopped sun-dried tomatoes (packed in oil if possible)
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 3/4 cup freshly grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • Fresh basil, chopped (optional, for garnish)

Instructions

  1. Pat 4 boneless skinless chicken breasts dry with paper towels. Season both sides with salt, pepper, and 1 teaspoon of Italian seasoning. Let them rest on the counter for 5 minutes.
  2. Over medium-high heat, warm 2 tablespoons of olive oil in a large skillet until shimmering but not smoking.
  3. Place the chicken breasts in the pan without crowding. Cook for about 5-6 minutes per side, or until golden brown and cooked through (internal temperature should reach 165°F / 74°C). Remove chicken and set aside on a plate. Tent loosely with foil to keep warm.
  4. In the same pan, reduce heat to medium. Add 3 minced garlic cloves and sauté for about 30 seconds until fragrant. Toss in 1/2 cup chopped sun-dried tomatoes and cook for 2 minutes to release their flavor.
  5. Pour in 1 cup heavy cream and 1/2 cup chicken broth, stirring to combine with garlic and tomatoes. Let it simmer gently for 3-4 minutes until it starts to thicken slightly.
  6. Stir in 3/4 cup freshly grated Parmesan cheese and 1/4 teaspoon red pepper flakes (if using). Keep stirring until the cheese melts into a smooth, creamy sauce. Taste and adjust salt and pepper if needed.
  7. Nestle the chicken breasts back in the sauce. Spoon some sauce over the top. Let everything warm together for 2-3 minutes to allow flavors to meld.
  8. Sprinkle with chopped fresh basil if desired and serve immediately.

Notes

If the sauce gets too thick before the chicken is ready, add a splash of chicken broth or cream to loosen it. Let the chicken release naturally from the pan before flipping to avoid sticking. Use fresh Parmesan cheese for best flavor and texture. For dairy-free adaptations, substitute heavy cream with coconut or cashew cream and omit or replace Parmesan with a vegan cheese.
