  • 4 boneless, skinless chicken breasts (about 1.5 pounds / 700 grams), pounded slightly
  • Salt and pepper, to season
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • ½ cup sun-dried tomatoes, chopped (packed in oil preferred)
  • 1 cup chicken broth (240 ml), low sodium if possible
  • ¾ cup heavy cream (180 ml) or half-and-half for lighter option
  • ¼ cup freshly grated Parmesan cheese (about 25 g)
  • 1 teaspoon Italian seasoning (dried basil, oregano, thyme, rosemary mix)
  • Pinch of red pepper flakes (optional)
  • A few fresh basil leaves, chopped (optional)
  • 1 tablespoon fresh lemon juice

Instructions

  1. Place chicken breasts between two sheets of parchment or plastic wrap. Gently pound with a meat mallet or rolling pin until about ½ inch (1.3 cm) thick. Season both sides generously with salt and pepper.
  2. Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add chicken breasts and cook for 5-6 minutes per side until golden brown and cooked through (internal temperature 165°F/74°C). Remove chicken and set aside, tented with foil to keep warm.
  3. Reduce heat to medium. In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant. Add chopped sun-dried tomatoes and cook for 2 minutes, stirring occasionally.
  4. Pour in 1 cup chicken broth, scraping up browned bits from the pan. Let simmer for 3-4 minutes to reduce slightly.
  5. Stir in ¾ cup heavy cream and ¼ cup grated Parmesan cheese. Let sauce simmer gently for 5 minutes until it thickens slightly. Add 1 teaspoon Italian seasoning and red pepper flakes if using. Adjust seasoning with salt and pepper to taste.
  6. Stir in 1 tablespoon fresh lemon juice and chopped fresh basil leaves.
  7. Return chicken breasts to the skillet, spoon sauce over them, and warm together for 1-2 minutes before serving.

Notes

If sauce gets too thick, add a splash of chicken broth or water to loosen it. Avoid overcrowding the pan when searing chicken to get a nice crust. Let chicken rest before slicing to keep it juicy. For dairy-free, substitute heavy cream with coconut milk or almond cream and Parmesan with nutritional yeast.
