  • 1 pound large shrimp, peeled and deveined
  • Salt and black pepper, to taste
  • 1 teaspoon smoked paprika
  • 1 tablespoon olive oil
  • 3 tablespoons unsalted butter, divided
  • 5 cloves garlic, finely minced
  • 1 small shallot, finely chopped
  • 1/2 cup heavy cream
  • 1/4 cup chicken broth or white wine
  • 1/3 cup sun-dried tomatoes, chopped
  • 2 cups baby spinach leaves
  • 1/2 cup freshly grated Parmesan cheese
  • 1 teaspoon Italian seasoning or dried oregano and basil mix
  • Fresh parsley, chopped, for garnish

Instructions

  1. Pat the shrimp dry with paper towels. Season with salt, pepper, and smoked paprika.
  2. Heat olive oil and 1 tablespoon butter in a skillet over medium-high heat. Add shrimp in a single layer and cook 2 minutes per side until pink and opaque. Remove shrimp and set aside.
  3. Lower heat to medium. Add remaining 2 tablespoons butter. Add minced garlic and chopped shallot. Stir constantly for 1-2 minutes until fragrant and softened but not browned.
  4. Pour in chicken broth or white wine to deglaze the pan, scraping up browned bits. Simmer for 2 minutes to reduce slightly.
  5. Stir in heavy cream and sun-dried tomatoes. Simmer gently for 3-4 minutes until sauce thickens slightly.
  6. Add baby spinach and cook until wilted, about 1 minute. Sprinkle Parmesan cheese and Italian seasoning. Stir to combine and melt cheese.
  7. Return shrimp to pan and stir gently to coat in sauce. Warm through for 1-2 minutes without overcooking.
  8. Remove from heat, garnish with fresh parsley, and serve immediately over pasta, rice, or mashed potatoes.

Notes

Do not rush the garlic step to avoid bitterness. Pat shrimp dry to prevent watery sauce. Keep heat moderate when adding cream to avoid curdling. Cook shrimp in batches to avoid steaming. Add spinach last to keep it bright and fresh.
