  • 4 boneless, skinless chicken breasts (about 1.5 lbs / 680g)
  • 1/3 cup sun-dried tomatoes packed in oil, chopped (about 50g)
  • 1 cup heavy cream (240ml)
  • 1/2 cup chicken broth (120ml)
  • 3 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese (about 50g)
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • A handful fresh basil leaves, chopped (for garnish)
  • 1 tablespoon olive oil (for sautéing garlic, optional)

Instructions

  1. Mince 3 cloves of garlic and chop about 1/3 cup of sun-dried tomatoes.
  2. Heat 1 tablespoon olive oil in a skillet over medium heat. Add garlic and sauté until fragrant and golden, about 1-2 minutes. Avoid burning.
  3. Place 4 boneless, skinless chicken breasts flat in the slow cooker. Season lightly with salt and pepper.
  4. Scatter chopped sun-dried tomatoes evenly over the chicken. Sprinkle 1 teaspoon Italian seasoning and optional 1/4 teaspoon red pepper flakes.
  5. Pour 1/2 cup chicken broth and 1 cup heavy cream over the chicken and tomatoes. Add sautéed garlic on top or directly into the crockpot if skipping sauté.
  6. Cover and cook on low for 3 to 4 hours, until chicken reaches 165°F (74°C) and is tender.
  7. About 15 minutes before serving, sprinkle 1/2 cup grated Parmesan cheese over the chicken. Turn crockpot to high or keep on low and cover to melt cheese and thicken sauce.
  8. Garnish with fresh chopped basil leaves. Serve hot over rice, mashed potatoes, or pasta.

Notes

Sautéing garlic before adding to the crockpot adds depth of flavor but is optional. Use chicken thighs as an alternative, cooking for 2.5 to 3 hours. For a dairy-free version, substitute heavy cream with full-fat coconut milk or cashew cream. If sauce is too thin at the end, stir in a slurry of 1 tsp cornstarch and 1 tbsp water and cook on high for 10 more minutes to thicken.
