  • 1 pound ground beef (preferably lean but not extra-lean)
  • 6 slices bacon, cooked until crispy and crumbled
  • 4 large russet potatoes (about 2 pounds), peeled and diced
  • 1 medium yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth (960 ml), low sodium preferred
  • 1 ½ cups milk (360 ml), whole milk or 2%
  • 1 cup small-curd cottage cheese (240 g), well-drained
  • 1 ½ cups sharp cheddar cheese (170 g), shredded
  • 2 tablespoons unsalted butter (30 g)
  • 2 tablespoons all-purpose flour (16 g)
  • Salt and pepper to taste
  • 1 teaspoon Dijon mustard (optional)

Instructions

  1. Cook the bacon in a large skillet over medium heat until crisp, about 8 minutes. Remove and drain on paper towels. Reserve 1 tablespoon of bacon fat in the skillet.
  2. Add ground beef to the skillet with reserved bacon fat. Break up and cook until no longer pink, about 6-8 minutes. Season lightly with salt and pepper. Drain excess fat if needed and set beef aside.
  3. In a large pot or Dutch oven, melt butter over medium heat. Add chopped onion and cook until translucent, about 5 minutes. Stir in minced garlic and cook for another minute until fragrant.
  4. Sprinkle flour over onions and garlic, stirring constantly to make a roux. Cook for 2 minutes to remove raw flour taste.
  5. Slowly whisk in chicken broth until smooth, then add diced potatoes. Bring to a boil, reduce heat to simmer, cover and cook until potatoes are tender, about 15 minutes.
  6. In a blender or with an immersion blender, blend cottage cheese and milk until very smooth.
  7. Stir the cottage cheese mixture into the pot with potatoes. Add browned beef and Dijon mustard if using. Simmer gently for 5 minutes to marry flavors and thicken slightly.
  8. Remove from heat and stir in shredded cheddar cheese until melted. Taste and adjust salt and pepper as needed.
  9. Ladle soup into bowls and sprinkle generously with crispy bacon crumbles. Add a final grind of black pepper if desired.

Notes

Cook bacon separately for best crispy texture and smoky flavor. Save some bacon fat to brown the beef for added depth. Blend cottage cheese with milk for a creamy texture without heavy cream. Remove pot from heat before adding cheese to prevent graininess. Adjust seasoning carefully as broth, bacon, and cheese add salt. If soup is too thick, add more broth or milk to loosen.
