  • 2 tablespoons (30ml) maple syrup
  • 4 ounces (115g) softened cream cheese
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • Pinch of ground ginger (optional)
  • Pinch of salt
  • Chopped walnuts or pecans (optional, for garnish)

Instructions

  1. Grate the carrots using a fine grater to yield about 1 cup (120g) of shredded carrot. This takes around 5 minutes.
  2. In a medium bowl, combine 1 cup (90g) rolled oats, 1 teaspoon ground cinnamon, 1/4 teaspoon ground nutmeg, a pinch of ground ginger (optional), and a pinch of salt. Stir to evenly distribute the spices.
  3. Add 1 cup (240ml) milk of your choice, 1/2 cup (120g) plain Greek yogurt, 2 tablespoons (30ml) maple syrup, and 1 teaspoon vanilla extract to the oat mixture. Stir well until combined.
  4. Fold in the shredded carrots gently to mix through the oat mixture.
  5. In a small bowl, beat 4 ounces (115g) softened cream cheese with 1 tablespoon (15ml) maple syrup until smooth and creamy.
  6. Divide the oat mixture evenly into two glass jars or containers. Dollop half the maple cream cheese mixture on top of each jar. Using a knife or skewer, gently swirl the cream cheese through the oats to create streaks without overmixing.
  7. Cover the jars and refrigerate for at least 6 hours or overnight to allow the oats to soak and flavors to meld.
  8. Before serving, optionally stir gently and top with chopped walnuts or pecans for added crunch. Serve chilled or at room temperature.

Notes

Use rolled oats for best texture; avoid quick or steel-cut oats unless soaking longer. Do not fully mix the cream cheese swirl into the oats before refrigerating to maintain pockets of tangy sweetness. Fresh shredded carrots provide better texture than pre-shredded.
