  • 2 cups (about 200g) shredded Monterey Jack or sharp cheddar cheese, or a blend
  • 12 fresh jalapeños, thinly sliced (seeds removed to reduce heat if desired)
  • 1 small red onion, finely diced
  • 2 stalks green onions, thinly sliced
  • A handful fresh cilantro, chopped (optional)
  • 1/2 cup (120ml) sour cream (or Greek yogurt as a lighter option)
  • Pickled jalapeños or banana peppers (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a medium bowl, toss the pulled pork with the BBQ sauce. Warm the pork if cold by microwaving for 1-2 minutes or gently on the stovetop.
  3. Prepare toppings: thinly slice jalapeños, dice red onion, slice green onions, and chop cilantro.
  4. Spread half of the tortilla chips evenly on a baking sheet or oven-safe platter.
  5. Distribute half of the BBQ pulled pork over the chips, then sprinkle with half of the shredded cheese, some diced red onion, and jalapeños.
  6. Add a second layer with the remaining chips, pork, cheese, onions, and jalapeños.
  7. Bake in the preheated oven for 10-15 minutes, until cheese is melted and bubbly. Watch closely after 10 minutes to avoid burning.
  8. Remove from oven and immediately top with sliced green onions, chopped cilantro, and dollops of sour cream. Add pickled jalapeños or banana peppers if desired.
