A warm, buttery apple crisp with a crunchy oat crumble and a secret layer of salted caramel. Perfect for cozy nights, holidays, or any occasion that calls for comfort in a bowl.

  • 6 medium apples (mix of Granny Smith and Honeycrisp), peeled, cored, and sliced ¼-inch thick
  • ¼ cup granulated sugar
  • ¼ cup light brown sugar, packed
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon salt
  • 2 tablespoons all-purpose flour
  • ½ cup salted caramel sauce (homemade or store-bought)
  • 1 cup old-fashioned rolled oats
  • ¾ cup all-purpose flour
  • ½ cup light brown sugar, packed
  • ¼ cup granulated sugar
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ½ cup unsalted butter, cold and cut into small cubes
  • Flaky sea salt (for finishing)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or non-stick spray.
  2. In a large bowl, combine sliced apples, granulated sugar, brown sugar, lemon juice, cinnamon, nutmeg, salt, and flour. Toss until evenly coated. Let sit for 5 minutes.
  3. Pour in ½ cup salted caramel sauce and gently fold into the apples until glossy.
  4. In a medium bowl, whisk together oats, flour, brown sugar, granulated sugar, cinnamon, and salt. Add cold cubed butter and cut in with a pastry cutter or fingertips until mixture resembles coarse crumbs with some pea-sized butter pieces.
  5. Spread half of the apple-caramel mixture into the prepared dish. Sprinkle about one-third of the oat crumble over the top. Add remaining apples, then cover with the rest of the crumble. Do not press down.
  6. Place dish on a baking sheet and bake for 40-45 minutes, until filling is bubbling and topping is deep golden brown. If browning too quickly, tent with foil for the last 10 minutes.
  7. Remove from oven and let cool on a wire rack for at least 15 minutes.
  8. Just before serving, sprinkle flaky sea salt over the top. Serve warm with vanilla ice cream or whipped cream.

Notes

For best results, use cold butter in the crumble and let the crisp rest after baking to allow the caramel to thicken. The caramel flavor deepens overnight, making leftovers even better.
