  • 3 ½ cups (420g) all-purpose flour
  • ½ cup (100g) light brown sugar
  • 2 teaspoons ground cinnamon
  • ½ teaspoon ground ginger
  • 1 ½ teaspoons salt
  • 1 teaspoon instant yeast
  • ¾ cup (180ml) warm water
  • 2 tablespoons olive oil
  • ½ cup (60g) pepitas (pumpkin seeds), toasted
  • Butter (unsalted, softened, for greasing and optional serving)

Instructions

  1. Mix the dry ingredients: In a large bowl, whisk together flour, light brown sugar, cinnamon, ground ginger, salt, and instant yeast until evenly combined. (5 minutes)
  2. Combine wet ingredients: In a separate bowl, mix sourdough discard, pumpkin puree, olive oil, and warm water until smooth and slightly thick. (3 minutes)
