  • 3 medium russet potatoes, peeled and diced into ½-inch cubes
  • 3 tablespoons unsalted butter
  • 3 garlic cloves, minced

  • ½ cup (120 ml) dry white wine (optional)
  • 2 sprigs fresh thyme
  • 1 bay leaf
  • Salt and freshly ground black pepper, to taste
  • 1 cup (100 g) Gruyère cheese, grated
  • Baguette slices, toasted

Instructions

  1. Peel and thinly slice the onions, peel and dice the potatoes, mince the garlic, and grate the Gruyère cheese. This prep takes about 15 minutes.
  2. Melt the butter in a large heavy-bottomed pot over medium-low heat. Add the onions and a pinch of salt. Stir frequently for 30-40 minutes until onions are deeply golden and caramelized.
  3. Add the minced garlic and cook for 1 minute until fragrant. Pour in the white wine to deglaze the pot, scraping up browned bits. Simmer until mostly evaporated, about 3-4 minutes.
  4. Add the diced potatoes, broth, thyme sprigs, and bay leaf. Bring to a gentle boil, then reduce heat and simmer for 25-30 minutes until potatoes are tender.
  5. Remove thyme sprigs and bay leaf. Season with salt and pepper to taste. Optionally add a splash of sherry vinegar or lemon juice to brighten the flavor.
  6. Preheat the oven broiler. Ladle soup into oven-safe bowls or keep in the ovenproof pot. Place toasted baguette slices on top, then cover generously with grated Gruyère cheese.
  7. Broil until the cheese bubbles and turns golden brown, about 3-5 minutes. Watch carefully to prevent burning.
  8. Let cool for a few minutes before serving. Enjoy the hot, gooey cheese crust with the rich soup.

Caramelize onions low and slow to avoid bitterness. Stir frequently. Use russet potatoes for creamy texture; Yukon Gold can be used as an alternative.
