Cozy Kielbasa and White Bean Soup: Easy 30-Min Dinner

A quick and hearty soup made with smoky kielbasa, creamy white beans, and a rich broth, perfect for chilly nights. This 30-minute recipe is simple, satisfying, and packed with flavor.

  • 12 oz (340 g) kielbasa, sliced into half-moons
  • 1 tbsp (15 ml) olive oil
  • 1 medium yellow onion, diced (about 1 cup)
  • 3 cloves garlic, minced
  • 2 medium carrots, diced (about 1 cup)
  • 2 stalks celery, diced (about 1/2 cup)
  • 4 cups (960 ml) low-sodium chicken broth
  • 2 cans (15 oz / 425 g each) white beans (cannellini or great northern), drained and rinsed
  • 1 tsp dried thyme
  • 1 bay leaf
  • Salt and black pepper to taste (start with 1/2 tsp salt and 1/4 tsp pepper)
  • 2 tbsp fresh parsley, chopped (for garnish)

Instructions

  1. Prep your ingredients: slice kielbasa into 1/4-inch half-moons, dice onion, carrots, and celery, mince garlic, and drain and rinse white beans.
  2. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add kielbasa in a single layer and cook without stirring for 2-3 minutes until browned. Stir and cook for another 2 minutes. Transfer kielbasa to a plate with a slotted spoon, leaving rendered fat in the pot.
  3. Reduce heat to medium. Add onion, carrots, and celery to the pot. Cook, stirring occasionally, for 5-7 minutes until onions are translucent and vegetables have softened. Add a splash of broth if the pot looks dry.
  4. Stir in minced garlic and dried thyme. Cook for 30 seconds until fragrant.
  5. Pour in chicken broth and add bay leaf. Scrape the bottom of the pot to release browned bits. Bring to a gentle boil.
  6. Stir in drained white beans and reserved seared kielbasa. Reduce heat to low and simmer for 10 minutes.
  7. Remove bay leaf. Take about 1/2 cup of beans from the pot and mash with a fork or potato masher, then stir back into the soup. Alternatively, use an immersion blender for 2-3 quick pulses.
  8. Taste and season with salt and pepper as needed. Optionally, stir in a squeeze of fresh lemon juice.
  9. Ladle soup into bowls, garnish with fresh parsley, and serve hot with crusty bread or a side salad.

Notes

For best flavor, don’t rush the sear on the kielbasa. Use low-sodium broth to control saltiness. Mashing some beans creates a creamy texture without dairy. The soup tastes even better the next day. Can be frozen for up to 3 months.
