  • About 1 bottle (750 ml) bourbon

Instructions

  1. Make the Warm Spice Syrup: Combine 1 cup sugar and 1 cup water in a medium saucepan. Add cinnamon sticks, cloves, allspice berries, star anise, and orange peel. Bring to a gentle boil over medium heat, then reduce to low and simmer for 15 minutes, watching to prevent boiling over.
  2. Strain the Syrup: Remove from heat and strain syrup through a fine mesh strainer into a heatproof container. Discard spices and peel. Let syrup cool slightly; it will thicken as it cools.
  3. Warm the Apple Cider: Pour the gallon of apple cider into a large pot or slow cooker. Heat gently on medium-low until just steaming (about 10-15 minutes). Avoid boiling.
  4. Set Up Your Bar: Transfer warm cider into serving vessel (slow cooker or thermal carafe). Place warm spice syrup in a smaller pitcher or bowl with a ladle. Arrange bourbon, garnishes, and mugs nearby for customization.
  5. Serve and Enjoy: Ladle cider into mugs, add 1-2 tablespoons warm spice syrup to taste, and finish with a splash of bourbon if desired. Garnish with cinnamon sticks or apple slices.

Notes

Keep heat low when simmering syrup to avoid bitterness. Use fresh spices for best flavor. Strain syrup well to avoid whole spices in the drink. Warm cider gently without boiling to preserve brightness. Syrup can be made up to two weeks ahead and refrigerated. Reheat gently before serving. Non-alcoholic version possible by omitting bourbon and adding sparkling water or ginger beer.
