Cozy Crockpot Chicken and Rice Casserole

A simple and comforting slow cooker casserole featuring tender chicken breasts, creamy rice, and melty cheddar cheese. Perfect for easy weeknight dinners with minimal fuss.

  • 1.5 pounds boneless, skinless chicken breasts
  • 1 cup long grain white rice (uncooked)
  • 1 can (10.5 oz) condensed cream of mushroom soup
  • 1 1/2 cups chicken broth
  • 1 cup shredded cheddar cheese

Instructions

  1. Trim any excess fat from the chicken breasts and pat dry with paper towels.
  2. In a mixing bowl, combine the condensed cream of mushroom soup and chicken broth. Stir until smooth.
  3. Pour the uncooked rice evenly into the bottom of the slow cooker.
  4. Place the chicken breasts on top of the rice, spacing evenly.
  5. Slowly pour the soup and broth mixture over the chicken and rice without stirring.
  6. Cover and cook on LOW for 4 to 5 hours.
  7. About 15 minutes before serving, sprinkle shredded cheddar cheese evenly over the top. Cover and let melt.
  8. Check that the chicken is cooked through and the rice is tender. If needed, cook an additional 15-30 minutes.
  9. Serve warm, spooning portions with cheesy top and creamy rice.

Notes

Use fresh or fully thawed chicken breasts for even cooking. Adding cheese too early can cause it to break down; add it in the last 15 minutes. For less liquidy casserole, leave lid off for last 15 minutes to evaporate excess moisture. Brown rice can be used but requires longer cooking time (6-7 hours). For dairy-free, substitute cheese and soup with plant-based alternatives.
