Instructions

  1. Activate the yeast: In a medium bowl, combine warm water (110°F/43°C), sugar, and yeast. Stir gently and let sit for 5-7 minutes until foamy.
  2. Make the dough: In a large bowl, combine flour and salt. Add melted butter and yeast mixture. Stir until shaggy dough forms. Knead by hand for 8-10 minutes or with stand mixer for 5-7 minutes until smooth and elastic.
  3. Let the dough rise: Place dough in greased bowl, cover, and let rise in warm spot for about 1 hour or until doubled in size.
  4. Shape the pretzel bites: Punch down dough, roll into 12-15 inch log, cut into 1-inch pieces, and shape into small balls or pinch ends.
  5. Prepare boiling water: Bring 8 cups water to boil, add baking soda carefully, reduce to simmer.
  6. Boil pretzel bites: Drop bites in simmering baking soda water for 30 seconds until they float. Remove with slotted spoon and drain.
  7. Bake: Place bites on lined baking sheet 1 inch apart. Bake at 425°F (220°C) for 12-15 minutes until golden brown.
  8. Make cinnamon sugar coating: Mix sugar and cinnamon in bowl. Melt butter separately.
