  • 4 medium ripe tomatoes, sliced
  • 2 cups shredded mozzarella cheese (about 200g)
  • 1 cup finely grated parmesan cheese
  • 1 cup ricotta cheese (optional)
  • 3 cloves garlic, minced
  • 1/4 cup fresh basil, chopped (or 1 teaspoon dried basil)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning
  • 1/2 cup breadcrumbs (optional, panko preferred)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Thinly slice the zucchini and tomatoes about 1/4 inch thick. Toss zucchini slices with 1 tablespoon olive oil, salt, and pepper. Let sit for 10 minutes, then pat dry with paper towels.
  3. In a bowl, combine ricotta (if using), shredded mozzarella, minced garlic, chopped basil, Italian seasoning, and half of the grated parmesan cheese. Mix well.
  4. Lightly grease a 9×13-inch baking dish with the remaining olive oil. Layer zucchini slices on the bottom, spread a layer of the cheese mixture over them, then add a layer of tomato slices seasoned with salt and pepper. Repeat layers, finishing with a tomato layer on top.
  5. Mix the remaining parmesan cheese with breadcrumbs (if using) and sprinkle evenly over the top layer of tomatoes.
  6. Bake in the preheated oven for 30-35 minutes until cheese is bubbly and the crust is golden and crispy. If the crust browns too quickly, cover loosely with foil for the last 10 minutes.
  7. Let the casserole rest for 5-10 minutes before serving to allow layers to set.
