This tender, cake-like quick bread is infused with concentrated apple cider and topped with a glossy cinnamon glaze. It tastes like the best part of a cider donut in sliceable form, perfect for fall mornings or cozy gatherings.

  • ½ cup (1 stick / 113 g) unsalted butter, softened
  • ¾ cup (150 g) granulated sugar
  • ¼ cup (50 g) light brown sugar, packed
  • 2 large eggs, at room temperature
  • 1 teaspoon vanilla extract
  • 2 cups (250 g) all-purpose flour
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1½ teaspoons ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ cup (60 g) plain Greek yogurt
  • 1 cup (120 g) powdered sugar, sifted
  • 1 teaspoon ground cinnamon
  • ½ teaspoon vanilla extract
  • 2 to 3 tablespoons (3045 ml) milk

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line with parchment paper, leaving overhang on the long sides.
  2. Optional: In a small saucepan, simmer apple cider over medium heat for 10-12 minutes until reduced to about ¾ cup. Set aside to cool.
  3. In a large bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  4. In a separate bowl, beat softened butter, granulated sugar, and brown sugar until light and fluffy (2-3 minutes).
  5. Beat in eggs one at a time, then add vanilla extract.
  6. Add Greek yogurt and reduced apple cider (or full cup if not reduced) to the butter mixture; beat on low until just combined.
  7. Pour wet ingredients into dry ingredients and fold gently with a rubber spatula until no streaks of flour remain. Do not overmix.
  8. Scrape batter into prepared loaf pan, spread evenly, and tap pan on counter to release air bubbles.
  9. Bake for 50-60 minutes, until a toothpick inserted in the center comes out clean or with a few moist crumbs. Cool in pan on a wire rack for 15 minutes.
  10. Lift bread out using parchment overhang and cool completely on wire rack.
  11. For the glaze: In a small bowl, whisk together powdered sugar, cinnamon, vanilla, and milk (1 tablespoon at a time) until smooth and pourable.
  12. Once bread is completely cool, drizzle glaze over top. Let set for 10-15 minutes before slicing.

Notes

For best flavor, reduce the apple cider to concentrate it. Room temperature ingredients ensure proper emulsification. Let the glaze set before slicing for clean cuts. Store in an airtight container at room temperature for up to 3 days. Freeze unglazed loaf for up to 3 months.
