  • 1/2 cup granulated sugar
  • 1/2 cup water

  • 2 tablespoons pumpkin puree (100% pumpkin, not pumpkin pie filling)
  • 1 tablespoon vanilla syrup (from above, or use maple syrup)
  • 1/4 teaspoon pumpkin pie spice (plus extra for garnish)
  • Pinch of salt

Instructions

  1. Make the Vanilla Syrup: Combine the sugar and water in a small saucepan over medium heat. Stir occasionally until the sugar dissolves completely, about 2 to 3 minutes. Remove from heat, stir in the vanilla extract, and let it cool to room temperature. This makes about 3/4 cup of syrup, which keeps in the fridge for up to two weeks.
  2. Prepare the Pumpkin Cream: In a mason jar, combine the heavy cream, pumpkin puree, 1 tablespoon of vanilla syrup, pumpkin pie spice, and a pinch of salt. Screw the lid on tight and shake vigorously for about 45 seconds. The cream should thicken slightly, like it’s one step before soft peaks—it should coat the back of a spoon but still be pourable.
  3. Sweeten the Cold Brew: Fill tall glasses with ice. Pour 1 cup of cold brew into each glass. Add 1 to 2 tablespoons of vanilla syrup to each glass, depending on sweetness preference. Stir gently with a long spoon to combine.
  4. Assemble the Drink: Slowly pour the pumpkin cream over the back of a spoon held just above the surface of the cold brew. Pour about 1/4 cup of cream per glass, or more if desired. The cream will settle into a thick layer on top, then slowly marble down through the coffee.
  5. Garnish and Serve: Sprinkle a pinch of pumpkin pie spice over the top of each drink. Optionally, add a cinnamon stick or star anise for visual appeal. Serve immediately with a straw.
