  • 1/3 cup raw honey (113g)

  • 1/2 cup dark chocolate chips (70% cocoa or higher, 90g)
  • 1/2 cup chopped nuts (walnuts, pecans, or almonds, 60g)
  • 1 tsp vanilla extract
  • 1/4 tsp sea salt
  • 1/2 tsp cinnamon (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper, leaving some overhang for easy removal.
  2. Spread the rolled oats and chopped nuts evenly on a baking sheet and toast in the oven for 10 minutes, stirring halfway through.
  3. In a microwave-safe bowl, combine raw honey and nut butter. Heat in 20-second increments, stirring each time until smooth and combined. Stir in vanilla extract, sea salt, and cinnamon if using.
  4. In a large bowl, combine the toasted oats and nuts with the melted honey and nut butter mixture. Stir quickly to coat all the oats evenly; the mixture will be sticky and shiny.
  5. Let the mixture cool for a minute or two, then fold in the dark chocolate chips to keep them from melting completely.
  6. Transfer the sticky mixture to the prepared pan and press down firmly and evenly using a spatula or wet hands.
  7. Place the pan in the refrigerator for at least 2 hours to let the bars firm up without becoming hard or crumbly.
  8. Once set, lift the slab out of the pan using the parchment overhang and cut into 10-12 bars with a sharp knife.
  9. Store the bars in an airtight container in the refrigerator for up to one week.

Always toast oats and nuts to enhance flavor and help bars hold together. Heat honey and nut butter mixture slowly to avoid scorching. Fold in chocolate chips after cooling slightly to keep melty pockets. Press mixture firmly into pan and chill thoroughly to prevent crumbling.
