  • 1 teaspoon fine sea salt
  • ½ cup baking soda (for boiling bath)

  • 8 ounces (225g) sharp cheddar cheese, freshly shredded
  • ¾ cup (180ml) lager beer (e.g., Warsteiner or Bitburger)
  • 1 tablespoon unsalted butter
  • 1 tablespoon all-purpose flour
  • ¼ cup (60ml) whole milk
  • 1 teaspoon Dijon mustard
  • ½ teaspoon garlic powder
  • Salt and black pepper to taste

Instructions

  1. Activate the yeast: In a large mixing bowl, combine warm water (110°F) and brown sugar. Sprinkle yeast on top and let sit for 5-7 minutes until foamy.
  2. Make the dough: Add melted butter, salt, and 2 cups of bread flour to the yeast mixture. Stir until combined. Gradually add remaining flour, ½ cup at a time, until a shaggy dough forms that pulls away from the bowl sides.
  3. Knead: Turn dough onto a lightly floured surface and knead for 6-8 minutes until smooth, elastic, and slightly tacky. Alternatively, use a stand mixer with dough hook on medium-low for 5 minutes.
  4. First rise: Place dough in a lightly greased bowl, cover with plastic wrap or a towel, and let rise in a warm spot for 30-40 minutes until doubled in size.
  5. Preheat and prep: Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper. Bring 8 cups of water to a boil in a large pot, then carefully stir in ½ cup baking soda (it will foam).
  6. Shape the bites: Punch down dough and turn onto a floured surface. Divide into 4 equal pieces. Roll each into a 1-inch thick rope, then cut into 1-inch pieces (about 40-50 total).
  7. Boil the bites: Working in batches of 8-10, drop dough pieces into boiling baking soda water. Boil for 30 seconds, flip, and boil another 30 seconds. Transfer to prepared baking sheet with a slotted spoon.
  8. Egg wash and salt: Brush each boiled bite with egg wash, then sprinkle generously with coarse sea salt.

  10. Make the beer cheese dip: While bites bake, melt butter in a small saucepan over medium heat. Whisk in flour and cook for 1 minute. Slowly pour in beer, whisking continuously. Add milk and Dijon mustard, whisk until smooth. Reduce heat to low, gradually add shredded cheddar, whisking until melted and smooth. Season with garlic powder, salt, and pepper.
