  • 1 cup rolled oats (90g)
  • 1/2 cup raw almonds (60g), chopped
  • 1 cup Medjool dates (about 8), pitted and chopped
  • 1/4 cup dried orange slices (20g), chopped finely
  • Zest of 1 medium orange
  • 2 tbsp chia seeds (optional but recommended)
  • 2 tbsp honey (substitute with maple syrup for vegan option)
  • 1 tsp vanilla extract
  • A pinch of sea salt

Instructions

  1. Pit and roughly chop the Medjool dates. Chop the raw almonds and dried orange slices into small pieces. Zest the orange carefully, avoiding the bitter white pith.
  2. In a food processor, combine the rolled oats, chopped almonds, and dates. Pulse about 10-15 times until the mixture is crumbly but sticky enough to hold together when pressed. If mixture feels too dry, add a teaspoon of water or honey.
  3. Transfer the blended mixture into a large bowl. Stir in the chopped dried orange slices, orange zest, chia seeds, honey, vanilla extract, and a pinch of sea salt until evenly distributed.
  4. Scoop about a tablespoon (15g) of the mixture and roll it between your palms to form a compact ball. Place the balls on a parchment-lined tray. If the mixture is sticky, lightly wet your hands to prevent sticking.
  5. Refrigerate the energy bites for at least 30 minutes to firm up.
  6. Once set, transfer the energy bites into an airtight container. Store in the fridge for up to a week or freeze for longer storage.

Notes

Use Medjool dates for best binding; soak dry dates in warm water if needed. Avoid over-blending to keep texture chunky. Zest orange just before mixing for freshness. Chill bites to firm up and develop flavor. Wet hands slightly when rolling to prevent sticking. Substitute nuts or seeds for allergies. Replace honey with maple syrup for vegan version.
