  • Cardamom pods or ground cardamom (optional, a pinch)
  • Cinnamon stick or ground cinnamon (optional)
  • Optional rose water (a few drops)

Instructions

  1. Measure your ingredients: For each cup, use 1 heaping teaspoon (about 5 grams) of finely ground Turkish coffee and 1 demitasse cup (about 3.5 fl oz / 100 ml) of cold water. Add sugar now if desired.
  2. Combine coffee, sugar, and optional cardamom or cinnamon in the cezve with cold water. Do not stir yet; let it sit briefly.
  3. Gently stir the mixture until coffee and sugar dissolve to prevent lumps.
  4. Place the cezve on low heat and heat slowly to allow foam to form gradually without boiling over.
  5. Watch for foam formation; just before boiling, remove the cezve from heat (about 3-4 minutes).
  6. Scoop some foam into each serving cup using a spoon.
  7. Return the cezve to low heat, let it foam again without boiling, then pour coffee slowly into cups, distributing foam evenly.
  8. Allow coffee grounds to settle for 1-2 minutes before drinking. Avoid stirring or disturbing the grounds.

Notes

Use cold water and low heat to avoid bitterness and preserve foam. Do not stir after brewing to keep grounds settled. Optional spices like cardamom and cinnamon add authentic aroma. Foam is essential for traditional texture and presentation. If cezve is unavailable, a small saucepan can be used but may affect foam quality.
