  • 1 ½ pounds (680 g) ground beef, preferably 80/20 for juiciness
  • ½ cup (50 g) breadcrumbs (plain or seasoned)
  • 1 large egg, beaten
  • ¼ cup (60 ml) milk
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Worcestershire sauce
  • Salt and black pepper, to taste
  • 2 cups (480 ml) beef broth (low-sodium preferred)
  • ¼ cup (30 g) all-purpose flour
  • 2 tablespoons (28 g) unsalted butter
  • 1 medium onion, sliced into rings
  • 1 tablespoon tomato paste
  • 1 teaspoon Dijon mustard (optional)
  • Salt and pepper, to taste

Instructions

  1. In a large mixing bowl, combine ground beef, breadcrumbs, beaten egg, milk, finely chopped onion, minced garlic, Worcestershire sauce, salt, and pepper. Mix gently until just combined.
  2. Divide mixture into 6 equal portions and shape each into oval patties about ¾ inch thick. Optionally, brown patties in a skillet with a little oil over medium heat for 2 minutes per side.
  3. Place sliced onion rings at the bottom of the slow cooker.
  4. Gently place patties on top of the onions, spacing evenly.
  5. In a separate bowl, whisk together beef broth, flour, melted butter, tomato paste, Dijon mustard (if using), salt, and pepper until smooth. Pour evenly over patties and onions.
  6. Cover and cook on low for 6-7 hours or on high for 3-4 hours. Avoid lifting the lid during cooking.
  7. Before serving, stir gravy gently to combine any separated liquids. Adjust salt and pepper as needed.

Notes

Browning patties before slow cooking is optional but adds extra flavor. To keep gluten-free, substitute breadcrumbs with almond flour and use gluten-free flour or cornstarch for thickening. Avoid overmixing meat to keep patties tender. If gravy is too thin, thicken with a slurry of flour or cornstarch and water, cooking on high for 15-20 minutes.
