  • 1 packet (2 ¼ tsp / 7g) active dry yeast
  • 1 cup (240ml) warm water (about 110°F / 43°C)
  • 1 tbsp granulated sugar
  • 1 tsp salt
  • 2 tbsp unsalted butter, melted
  • 10 cups water (for boiling)
  • ⅔ cup baking soda (for boiling)
  • ½ cup (100g) granulated sugar (for coating)
  • 2 tsp ground cinnamon (for coating)
  • ¼ tsp ground nutmeg (optional, for coating)
  • 4 tbsp unsalted butter, melted (for brushing post-bake)

Instructions

  1. Activate the yeast by combining 1 cup warm water, 1 tbsp sugar, and yeast in a large bowl. Let sit for 5-7 minutes until foamy.
  2. Add melted butter, salt, and flour to the yeast mixture. Stir until a shaggy dough forms. Knead with a stand mixer dough hook for 5-7 minutes or by hand for 8-10 minutes until smooth and elastic.
  3. Lightly oil the bowl, cover with a damp towel or plastic wrap, and let the dough rise in a warm spot for about 1 hour or until doubled in size.
  4. Preheat oven to 425°F (220°C). Bring 10 cups water and ⅔ cup baking soda to a rolling boil in a large pot.
  5. Punch down the risen dough and roll it into a long rope about ½ inch thick. Cut into 1-inch pieces to form pretzel bites.
  6. Boil pretzel bites in batches for 20-30 seconds until they puff slightly. Remove with a slotted spoon and place on a parchment-lined baking sheet.
  7. Bake pretzel bites for 12-15 minutes until golden brown and firm to the touch.
  8. Brush hot pretzel bites immediately with melted butter. Toss in a mixture of sugar, cinnamon, and nutmeg until fully coated.
  9. Transfer coated pretzel bites to a cooling rack for 10 minutes to set the coating and cool slightly. Serve warm or at room temperature.

Notes

Keep water temperature around 110°F for yeast activation. Do not overcrowd the boiling pot to allow even puffing. Brush with butter immediately after baking to help cinnamon sugar stick and keep coating crunchy. Dough can be refrigerated overnight and brought to room temperature before shaping. For gluten-free, use a 1-to-1 gluten-free flour blend. For dairy-free, substitute butter with coconut oil or plant-based butter.
