Savory Pulled Chicken Sliders with Tangy Alabama White Sauce

  • 34 boneless, skinless chicken breasts (about 2 pounds / 900 grams)
  • 1 cup (240 ml) chicken broth or stock
  • 1 tablespoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon olive oil or vegetable oil
  • ½ cup (120 ml) mayonnaise
  • ¼ cup (60 ml) apple cider vinegar
  • 1 tablespoon prepared horseradish
  • 1 tablespoon Dijon mustard
  • 1 teaspoon sugar
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Pinch of cayenne pepper (optional)
  • 12 slider buns or small sandwich rolls
  • Pickle slices (optional)
  • Coleslaw (optional)

Instructions

  1. Pat the chicken breasts dry. Mix smoked paprika, garlic powder, onion powder, salt, and black pepper in a small bowl. Rub the spice blend evenly over the chicken breasts.
  2. Place the seasoned chicken breasts into a slow cooker. Pour chicken broth over the top. Cover and cook on low for 5-6 hours or on high for 2-3 hours until chicken shreds easily. Alternatively, cook in an Instant Pot on high pressure for 15 minutes with natural pressure release.
  3. Remove chicken and shred finely using two forks or meat claws. Return shredded chicken to slow cooker juices and stir gently.
  4. In a medium bowl, whisk together mayonnaise, apple cider vinegar, horseradish, Dijon mustard, sugar, salt, black pepper, and optional cayenne pepper until smooth. Refrigerate while chicken cooks.
  5. Slice slider buns in half and toast if desired. Assemble sliders by piling pulled chicken on bun bottoms, drizzling Alabama white sauce over, adding pickle slices and coleslaw if using, then topping with bun lids.

Notes

For gluten-free, use gluten-free buns or lettuce wraps. For lighter sauce, replace half the mayo with Greek yogurt. Save cooking juices to keep chicken moist. Toast buns for added texture. Sauce tastes better after resting in fridge. Chicken thighs can be used instead of breasts with adjusted cooking time.
