Quick and easy grilled steak bites marinated with fresh rosemary, thyme, garlic, and lemon zest, perfect for a flavorful weeknight dinner or entertaining guests.

Ingredients

Scale
  • 1.5 pounds beef sirloin or ribeye steak, cut into 1-inch cubes
  • 2 tablespoons olive oil (extra virgin preferred)
  • 1 tablespoon fresh rosemary, finely chopped
  • 1 tablespoon fresh thyme leaves
  • 3 cloves garlic, minced
  • 1 teaspoon kosher or sea salt
  • ½ teaspoon freshly ground black pepper
  • Zest of 1 lemon
  • Pinch of red pepper flakes (optional)

Instructions

  1. Trim excess fat from the steak and cut into roughly 1-inch cubes, keeping pieces uniform for even cooking (about 10 minutes).
  2. In a mixing bowl, whisk together olive oil, minced garlic, chopped rosemary, thyme leaves, salt, black pepper, lemon zest, and red pepper flakes if using.
  3. Toss the steak cubes in the marinade until well coated. Let sit at room temperature for 15-20 minutes or refrigerate up to 1 hour if prepping ahead.
  4. Preheat grill or grill pan over medium-high heat for about 5 minutes until hot.
  5. Place marinated steak cubes on the grill spaced apart. Grill for 2-3 minutes per side, turning carefully with tongs, aiming for medium-rare to medium doneness (135-140°F internal temperature). Total grilling time about 8-10 minutes.
  6. Transfer grilled steak bites to a plate and let rest for 5 minutes to redistribute juices.
  7. Serve warm, optionally sprinkled with extra fresh herbs or flaky sea salt.

Notes

Let the steak marinate for at least 15 minutes to build flavor. Avoid overcrowding the grill to ensure a good sear. Rest the meat after grilling to keep it juicy. If flare-ups occur, move steak bites to a cooler spot temporarily. For indoor cooking, use a cast iron skillet or grill pan.
