  • 1 cup beef broth
  • 1/2 cup red wine (optional)
  • Beef drippings and juices from the roast
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon soy sauce (optional)
  • Salt and pepper to taste
  • 6 crusty hoagie rolls or French rolls
  • Swiss cheese slices or provolone (optional)
  • Dijon mustard or horseradish sauce (optional)

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. Pat the 3 lb beef chuck roast dry with paper towels. Rub with olive oil, then sprinkle evenly with kosher salt, black pepper, minced garlic, thyme, and rosemary. Let it sit at room temperature for 15 minutes.
  3. Heat the Dutch oven over medium-high heat. Once hot, add the roast and sear on all sides until a deep brown crust forms, about 4 minutes per side.
  4. Pour in 1 cup beef broth and 1/2 cup red wine (if using). Use a wooden spoon to scrape up any browned bits from the bottom.
  5. Place the lid on the Dutch oven and transfer it to the preheated oven. Roast for about 2.5 to 3 hours, or until the internal temperature reaches 195°F (90°C) for tender, shreddable beef. Check after 2 hours and add more broth if the roast looks dry.
  6. Remove the pot from the oven and let the beef rest covered for 15-20 minutes.
  7. Skim excess fat from the top of the juices in the pot. Pour the remaining liquid into a saucepan, add Worcestershire sauce and soy sauce, and simmer over medium heat for 5-10 minutes. Season with salt and pepper to taste.
  8. Using a sharp knife, cut the roast against the grain into thin slices.
  9. Slice the hoagie rolls horizontally. Optional: toast them lightly under the broiler with a slice of Swiss or provolone cheese until melty and bubbly.
  10. Layer the sliced beef generously on each roll and serve with a side of warm au jus for dipping.
