A quick and easy appetizer featuring sweet Medjool dates stuffed with creamy goat cheese and wrapped in crispy bacon, perfect for parties and gatherings.

  • 20 large Medjool dates, pitted
  • 4 ounces (115 grams) creamy goat cheese, softened
  • 10 slices thin-cut bacon
  • 1 tablespoon olive oil, for brushing
  • Freshly ground black pepper, to taste (optional)
  • Fresh thyme or rosemary sprigs for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Using a sharp knife, make a small slit along one side of each date and remove the pit if not already pitted.
  3. Spoon approximately 1 teaspoon (about 5 grams) of softened goat cheese into each date’s cavity without overfilling.
  4. Cut each bacon slice in half if using regular thickness. Wrap each stuffed date with a half slice of bacon, securing with a toothpick if needed.
  5. Place the wrapped dates seam side down on the prepared baking sheet, spacing about 1 inch apart.
  6. Lightly brush the bacon with olive oil and sprinkle with freshly ground black pepper if desired.
  7. Bake for 20-25 minutes, turning the dates over halfway through to ensure even browning and crispiness.
  8. Check that the bacon is crispy and golden; if needed, bake in 2-3 minute increments or broil for 1-2 minutes watching carefully.
  9. Remove from oven and let cool for 5 minutes. Garnish with fresh thyme or rosemary if using, then serve warm.

Notes

Use thin-cut bacon for best crispiness; if using thick-cut, slice lengthwise. Do not overstuff dates with cheese to prevent spilling. Flip dates halfway through baking for even crisping. Can be prepared ahead and refrigerated before baking. Reheat in oven to maintain crispiness; avoid microwaving.
