Ingredients

  • Bone-in fully cooked ham (about 8-10 pounds)
  • Pineapple rings (canned or fresh)
  • Whole cloves (20-25 cloves)
  • Brown sugar (1 cup, light or dark)
  • Honey (1/2 cup)
  • Dijon mustard (2 tablespoons)
  • Ground cinnamon (1 teaspoon)
  • Ground nutmeg (pinch, optional)
  • Orange juice (1/4 cup, freshly squeezed if possible)
  • Butter (2 tablespoons, unsalted, softened)

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Remove the ham from packaging and pat dry with paper towels. Score the surface in a diamond pattern about 1/4 inch deep.
  3. Insert whole cloves into the center of each diamond, spacing them evenly.
  4. Place pineapple rings over the ham, securing them with toothpicks if needed.
  5. In a small saucepan, combine brown sugar, honey, Dijon mustard, orange juice, ground cinnamon, and nutmeg if using. Heat gently, stirring until sugar dissolves and glaze is smooth. Remove from heat and stir in softened butter.
  6. Place the ham on a rack in a roasting pan. Brush a generous amount of glaze all over the ham and pineapple, reserving some glaze for basting.
  7. Bake uncovered for about 1 hour and 30 minutes, basting with glaze every 20 minutes. Use a meat thermometer to check; internal temperature should reach 140°F (60°C).
  8. Remove the ham from the oven and tent loosely with aluminum foil. Let rest for 15-20 minutes.
  9. Slice the ham against the grain and serve with caramelized pineapple and pan juices.

Use a meat thermometer to avoid overcooking. Score the ham to help glaze penetrate. Baste several times during cooking to build flavor and prevent burning.
