A quick and flavorful grilled shrimp skewer recipe featuring a tangy honey lime marinade with fresh cilantro, perfect for weeknight dinners or impressing guests.

  • 1 pound (450g) large shrimp, peeled and deveined
  • 2 tablespoons honey (mild, light honey like clover or orange blossom)
  • Juice of 2 limes (about 3 tablespoons)
  • 2 cloves garlic, minced
  • 1/4 cup fresh cilantro, finely chopped
  • 2 tablespoons extra virgin olive oil
  • 1/2 teaspoon salt (sea salt preferred)
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon optional chili flakes

Instructions

  1. Prepare the marinade by whisking together honey, fresh lime juice, minced garlic, chopped cilantro, olive oil, salt, black pepper, and chili flakes if using until smooth and vibrant.
  2. Add peeled and deveined shrimp to the marinade, toss gently to coat evenly, cover and refrigerate for 15 to 30 minutes. Do not marinate longer than 30 minutes.
  3. Heat grill or grill pan to medium-high heat (about 400°F / 200°C). Lightly oil grill grates if using a grill.
  4. Thread 4 to 5 shrimp per skewer, leaving space between each shrimp.
  5. Grill shrimp skewers for 2 to 3 minutes per side until shrimp turn pink and opaque and curl into a loose ‘C’ shape.
  6. Remove shrimp immediately once done to avoid overcooking.
  7. Serve warm, drizzle with leftover marinade, garnish with extra cilantro and lime wedges.

Notes

Soak wooden skewers in water for 30 minutes before use to prevent burning. Do not marinate shrimp longer than 30 minutes to avoid toughness. Use fresh lime juice for best flavor. Avoid overcrowding the grill. Let shrimp rest a minute after grilling for juiciness. Can broil in oven as alternative cooking method.
