  • 4 cups seedless watermelon, cubed (about 600g)
  • 1 cup crumbled feta cheese (about 150g)
  • 2 tablespoons fresh mint leaves, chopped (optional)
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon aged balsamic vinegar (optional)
  • Freshly ground black pepper, to taste
  • Sea salt, lightly sprinkled

Instructions

  1. Cut about 4 cups (600g) of seedless watermelon into 1-inch (2.5 cm) cubes, being careful not to press too hard to avoid soggy pieces.
  2. Crumble about 1 cup (150g) of feta cheese by hand or with a fork to get a crumbly texture.
  3. In a medium mixing bowl, gently toss the watermelon cubes with crumbled feta, chopped fresh mint, a drizzle of extra virgin olive oil, and a splash of aged balsamic vinegar if using. Add freshly ground black pepper and sea salt to taste. Be gentle to keep watermelon intact.
  4. If time allows, let the mixture sit for 5-10 minutes at room temperature to let flavors meld (optional).
  5. Arrange the bites on a serving platter or divide into small plates. Garnish with extra mint leaves or a few twists of black pepper before serving.
