  • 4 ounces goat cheese, softened
  • 810 asparagus stalks, trimmed and cut into 2-inch pieces
  • 1 cup sugar snap peas, trimmed
  • 45 medium radishes, thinly sliced
  • 1 small shallot, finely chopped
  • 1 tablespoon olive oil
  • 1 teaspoon fresh thyme leaves (or rosemary)
  • 1 clove garlic, minced (optional)
  • Salt and freshly ground black pepper, to taste
  • 1 egg, beaten (for egg wash)
  • 1 teaspoon lemon zest (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Toss asparagus pieces, sugar snap peas, and sliced radishes with olive oil, minced garlic (if using), salt, pepper, and half the fresh thyme. Spread them on the baking sheet and roast for 8-10 minutes until just tender but still vibrant.
  3. On a lightly floured surface, gently roll the puff pastry to smooth any folds, aiming for about a 10×10 inch square. Transfer it to the parchment-lined baking sheet.
  4. Score a border about 1 inch from the edges of the pastry with a sharp knife, being careful not to cut all the way through.
  5. In a small bowl, combine goat cheese with lemon zest (if using) and the remaining thyme leaves. Spread this mixture evenly inside the scored border of the pastry.
  6. Arrange the roasted vegetables evenly over the goat cheese layer, leaving some space so the crust can puff.
  7. Brush the edges of the puff pastry with beaten egg for a golden finish.
  8. Bake the tart in the preheated oven for 20-25 minutes, or until the crust is puffed and golden brown.
  9. Cool slightly on a wire rack before slicing to let the cheese set and the tart hold together better.

Keep vegetables crisp-tender by roasting before baking to prevent sogginess. Score the pastry border to create a puffed edge. Use good-quality puff pastry with real butter for best texture.
