  • 1 cup small-curd cottage cheese
  • ½ cup plain full-fat Greek yogurt
  • 1 tablespoon fresh lemon juice
  • Salt and pepper, to taste
  • 1 cup cherry tomatoes, halved
  • ½ cup roasted red peppers, diced
  • 2 tablespoons fresh basil, chopped (optional)
  • 1 cup fresh blueberries
  • 2 tablespoons chopped green onions or chives
  • Fresh parsley or dill for garnish (optional)

Instructions

  1. In a medium bowl, combine cottage cheese, Greek yogurt, lemon juice, salt, and pepper. Mix gently until smooth but still textured (about 2-3 minutes).
  2. Spoon the cottage cheese mixture evenly into the bottom of a glass serving dish and smooth the surface gently to about a half-inch thickness (about 3 minutes).
  3. In a small bowl, combine halved cherry tomatoes, diced roasted red peppers, chopped basil, and a pinch of salt. Toss lightly.
  4. Spread the tomato and roasted pepper mixture evenly over the white base layer without pressing down hard (3-5 minutes).
  5. Sprinkle fresh blueberries evenly over the red layer. Add chopped green onions or chives and fresh herbs like parsley or dill if desired (about 2 minutes).
  6. Chill the dip in the refrigerator for at least 15 minutes before serving to let flavors meld.

Notes

Pat tomatoes dry to avoid watery dip. Use small-curd cottage cheese for best texture. Chill dip for at least 15 minutes before serving to set layers. Add blueberries just before serving if making ahead to keep fresh. For vegan version, substitute dairy with silken tofu or cashew cream and plant-based yogurt.
