  • About 20 cherry or grape tomatoes, halved if large
  • 20 small fresh mozzarella balls (bocconcini), drained
  • Around 20 medium-sized fresh basil leaves, whole
  • 2 tablespoons extra virgin olive oil
  • About 2 tablespoons balsamic glaze for drizzling
  • Optional: Sea salt and freshly cracked black pepper to taste

Instructions

  1. Rinse the cherry tomatoes and basil leaves under cold water. Pat dry with a clean towel. Halve larger tomatoes if needed. Drain the fresh mozzarella balls well.
  2. In a small bowl, gently toss the tomatoes and mozzarella balls with 2 tablespoons of extra virgin olive oil.
  3. Thread one cherry tomato, then a basil leaf folded in half (if large), followed by a mozzarella ball onto each skewer. Repeat until the skewer is full, usually 3-4 pieces per skewer. Arrange skewers on a serving platter.
  4. Sprinkle a pinch of sea salt and freshly cracked black pepper over the skewers. Drizzle evenly with about 2 tablespoons of balsamic glaze.
  5. Let the skewers sit for 5 minutes before serving to let the flavors mingle. Serve at room temperature.

Notes

Pat mozzarella dry to avoid soggy skewers. Drizzle balsamic glaze just before serving to prevent sogginess. Basil leaves should be fresh and bright green. Skewers can be assembled up to 1 day ahead and refrigerated without glaze. Optional grilling for 2 minutes per side adds smoky flavor.
