Instructions

  1. Prepare the glaze: In a small bowl, whisk together 1/4 cup honey, 1-2 tablespoons hot sauce, 2 tablespoons brown sugar, 1 teaspoon garlic powder, 1 teaspoon smoked paprika, and 1/2 teaspoon freshly ground black pepper until smooth (about 2 minutes).
  2. Cook the smokies: Heat 2 tablespoons butter in a large skillet over medium heat. Once melted and shimmering, add the smokies. Cook, stirring occasionally, for 5-7 minutes until they start to brown and release some fat.
  3. Add the glaze: Pour the prepared glaze over the smokies in the skillet. Stir gently to coat evenly. Lower heat to medium-low.
  4. Simmer and thicken: Let the smokies simmer in the glaze for 10-12 minutes, stirring every few minutes until the sauce bubbles and thickens into a sticky, shiny coating. Watch carefully to avoid burning; reduce heat if necessary.
  5. Final touches: Remove skillet from heat once glaze is thick and clings to each smokie. Sprinkle chopped parsley or chives on top if desired.
  6. Serve warm: Transfer smokies to a serving dish and enjoy immediately.

Do not rush the simmering step to avoid burning the glaze. Browning the smokies before glazing adds caramelized flavor. Use a silicone spatula or wooden spoon to avoid scratching the pan.
